Vanilla Cupcakes

Description

Simple to make cupcakes that are sure to please any taste buds - young and old.

Serves:
10
Ingredients

  • CAKE MIX
  • 250 g butter (softened)
  • 1 1/2 cups milk
  • 1 cup sugar
  • 2 eggs
  • 1 cup self raising flour
  • 1 tsp vanilla essence

ICING SUGAR (optional)

  • 150g Butter
  • 1 1/2 cup icing sugar
  • 3/4 cup milk
  • Vanilla essence
  • Colouring (optional)
Instructions
  1. Line cupcake tin with paper
  2. Sift flour - put aside
  3. Pre-heat oven to 200C
  4. Cream together butter and sugar (place in microwave for 10-15 sec if butter is too hard)
  5. Mix in eggs, one at a time until smooth
  6. Mix in 1/4 of flour alternating with 1/4 milk into the butter and sugar mixture until all mixed together. Mix until batter forms a ribbon like appearance from the mixer. (Add more milk if neccessary)
  7. Add vanilla essence
  8. Carefully pour mixture into the cupcake tin - use a table spoon to avoid spillage
  9. Wipe off any excess on the cupcake tin (makes cleaning up easier)
  10. Place in oven and bake for 15mins on 200C
  11. Leave for another 3-5 mins on 180C (Check that skewer comes out clean)
  12. Leave to cool completely

ICING (Optional)

  1. Soften butter and mix with icing sugar
  2. Slowly add milk to get preferable consistancy
  3. Add food colour (optional)
  4. Spread on cupcake
  5. Place in fridge to harden
