Simple to make cupcakes that are sure to please any taste buds - young and old.

Ingredients
- CAKE MIX
- 250 g butter (softened)
- 1 1/2 cups milk
- 1 cup sugar
- 2 eggs
- 1 cup self raising flour
- 1 tsp vanilla essence
ICING SUGAR (optional)
- 150g Butter
- 1 1/2 cup icing sugar
- 3/4 cup milk
- Vanilla essence
- Colouring (optional)
Instructions
- Line cupcake tin with paper
- Sift flour - put aside
- Pre-heat oven to 200C
- Cream together butter and sugar (place in microwave for 10-15 sec if butter is too hard)
- Mix in eggs, one at a time until smooth
- Mix in 1/4 of flour alternating with 1/4 milk into the butter and sugar mixture until all mixed together. Mix until batter forms a ribbon like appearance from the mixer. (Add more milk if neccessary)
- Add vanilla essence
- Carefully pour mixture into the cupcake tin - use a table spoon to avoid spillage
- Wipe off any excess on the cupcake tin (makes cleaning up easier)
- Place in oven and bake for 15mins on 200C
- Leave for another 3-5 mins on 180C (Check that skewer comes out clean)
- Leave to cool completely
ICING (Optional)
- Soften butter and mix with icing sugar
- Slowly add milk to get preferable consistancy
- Add food colour (optional)
- Spread on cupcake
- Place in fridge to harden
