Description
This is an easy to make strawberry cake that requires minimal ingrediants and can be ready in less than an 1hr.
The sponge cake is sweet but is balanced by the fresh cream and strawberries.
Perfect for parties and birthdays =)

Ingredients
Cake Base
- 3/4 Cup self raising flour (I used normal flour + baking powder cos of what i had in the pantry and it worked just fine too, but must sift together at least 3 times to make it really even)
- 3 TBS of vegetable oil
- 200grams of caster sugar (i used normal sugar, still ok ^_^ )
- 4 eggs at room temperature (i used 3 of those XXXL ones o_0 )
- 1 tsp of salt
- 30g of fresh milk (the recipe i followed off used grams.. i dont know why... but i'd say it was roughly 1/4-1/2cup)
Filling and Topping:
- 2 -3 Punnets of strawberries
- 300 mls of fresh whipping cream
Instructions
Cake -
- Grease a 20cm diametre round cake tin, put aside
- Pre heat oven to 180 degrees, use the lowest rack possible
- Beat eggs, salt and sugar together (5-7mins) on HIGH until ribbon-like consistancy
- Beat eggs and sugar for another 2 mins on LOW (stablizes the air inside)
- Sift flour into the batter, small amounts at a time and gently FOLD into the batter
- Separate about 1/4 of the batter into a separate bowl and FOLD in the vegetable oil into this small portion. Make sure its well blended
- When you have an even consistency, add back into the big bowl and continue to fold gently (this will make sure you don't deflate the batter)
- FOld in milk
- Slowly pour the batter into the cake tin
- Bake on lowest shelf for 35 mins (test with skewer)
Filling -
- Whip the cream til stiff
- Wash and de-leaf strawberries, slice in thin pieces (i soaked them in a bit of water and sugar :D makes them nicer
- Leave some of the nicer strawberries for decoration
Assembling Cake -
- When cake has been cooled on a rack
- Slice cake in half
- With spatular, put a 1cm thick layer of cream, top off with a layer of strawberries
- Put the top half back on, apply another layer of cream
- Decorate the top of the cake with whatever pattern you like =))
- Best served slighly chilled
