Description
Work on the dough lightly and quickly
If you are heavy handed your scones will turn out very tough
It's better to undermix the dough than over mix it

Ingredients
2 cups self raising flour- Pinch of salt
- 30g butter cut to small pieces
- 1/2 cup milk
- 1/2 water
Instructions
Preheat oven to 220C
Sift flour and salt in a bowl
Add butter and lightly rub in with your fingertips
Combine milk and water
Make a well in centre of flour
Pour in liquid all at once, reserving a teaspoon for glazing
Mix quickly to a soft dough
Turn on to floured board
Knead lightly
Press out to form a round about 2cm thick
Cut with a round cutter
Place on greased oven tray and glaze with milk
Baked 10-12mins till scones sounds hollow when tappped
