Orange-Pumpkin Muffins

Ingredients
  • 2 and 1/2 cups of sifted self raising flour
  • 1/6th of a tub of Pro-Active margarine
  • 1/2 Cup of sugar (white or custard)
  • 2 Eggs
  • 1 Orange
  • 1 Cup of cooked japanese pumpkin
Instructions

1.  Mix the margarine and sugar in a mixing bowl, while adding 2 tea spoons of water to assist in melting the margarine)
2. Beat the mixture until the margarine changes colour to about white.
3. Beat two eggs into the mixture for about 3 - 5 minutes
4. Set the oven to 200 degrees celcius, non-fan forced
5. Liquidise one orange
6. Mash up 1 cup of cooked pumpkin
7. Mix the pumpkin and orange mixture into the sugar-margarine mixture.
8. Mix the flour into the mixture evenly
9. Grease a muffin pan
10. Scoop the mixture into the muffin tray
11. Place in the oven for 25 minutes
