Date and Walnut Squares

Ingredients

  • 1 cup finely chopped walnuts
  • 1 cup finelychopped dried dates
  • 1/3 cup soft brown sugar
  • 2 eggs lightly beaten
  • 1/3 cup oil
  • 1/2 cup plain yoghurt
  • 1 1/2 cups self raising flour
  • 1 tablespoon caster sugar
  • 1/2 teaspoon ground cinnamon
Instructions

Preheat oven to 180 C

Brush shallow 27 X 18 cm cake tin with butter

Cover base with paper

Place all but 1/4 cup walnuts in bowl with dates and sugar.

Add eggs, oil, yoghurt and sifted flour

Using wooden spoon beat 2 minutes or until all combined and mixture  is almost smooth

Spoon mixture into prepared tin

Combnine caster sugar and cinnamon=cinnamon sugar

Sprinkle cinnamon sugar and the reserved walnuts over the surface of the cake

Bake 35 minutes or until a skewer comes out clean when inserted in centre of cake

Leave in tin 5 minutes before lifting onto wire rack to cool.

Cut to squares
