Classic crumbly shortbread

Ingredients
- 250g Butter
- 1/2cup castor sugar
- 1 teaspoon vanilla essence
- 2 cups plain flour
- 1/2 rice flour
- 1 tablespoon castor sugar,dusting
Instructions
- Preheat oven at 160 degrees, 140 degrees Celcius for fan forced ovens
- IN a bowl combine sugar butter and vanilla and beat with an electric beater till light and creamy
- Sift in flour and mix together till well combined
- Seperate into 2 equal portions
- LIne 2 square baking trays with greaseproof paper
- place a portion of dough in each tray and flattern
- Prick with fork and sprinkle with sugar to decorate (optional)
- Bake in oven for 35minutes or until pale golden brown
- Place on rack to cool. REmove from tray and cut into slices to serve
This can be stored in an airtight container for a week
