Chicken Satay

Description

An Indonesian food consisting of small marinate chicken on skewers and grilled or broiled. It's a favorite snack food but is also often served for an appetizer and sometimes as a main dish.

Serves:
Ingredients
  • 1 1/2 lbs chicken breasts
  • 1 small onion, grated
  • 1-2 garlic clove, crushed
  • 1/2 cup sweet soy
  • salt
  • white pepper
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1/2 tablespoon lemon juice
  • 1-2 teaspoon sambal oelek (optional) or chili paste (optional)
Instructions
  1. Cut the chicken into cubes
  2. Make a marinade from the remaining ingredients.
  3. Add the meat and leave to marinate for minimum of 30 minutes (the longer the better)
  4. Skewer the meat onto wooden skewers, soak the wooden for half an hour in water, keep the marinade.
  5. Roast them under a grill, in a grill pan or on the barbeque until done, about ten minutes or shorter.
  6. Baste with the remaining marinade during cooking.
