Ingredients
2 egg, lightly beaten- 2 cups grated carrot
- 2 tspns grated oranged rind
- 2/3 cup chopped pecan nuts
- 1/2 tspn ground cinnamon
- 1/3 cup orange juice
- 1/2 cup oil
- 2/3 cup caster sugar
- 1 1/3 cup self-raising flour
Instructions
Preheat oven to 180C
Brush a shallow, 20cm square cake tin with melted butter
Line base with paper
Stir and combine eggs, carrot, rind, nuts, cinnamon,juice, oil and sugar in bowl
Shift flour into bowl.
Beat 1 minute with wooden spoon or until mixture is thick and ingredients well comobined
Bake 45 minutes or until kkkewer comes out clen when inserted in centre of cake
