Butter Cake

Serves:
Ingredients
  • 125g Butter
  • 1/2 cup caster sugar
  • 1/4 tsp vanilla essence
  • 2 eggs
  • 2 cups self raising flour
  • 1/2 cup milk

Vanilla Icing

  • 1 cup icing sugar
  • 15g butter
  • 1/4 tsp vanilla essence
  • 1-2 spoon hot water
Instructions
  1. Preheat oven to 180C
  2. Cream butter and sugar until light and fluffy
  3. Add eggs one at a time
  4. Add vanilla essence
  5. Fold flour gently into mixture. Alternate with milk.
  6. Pour mixture into pre-grease 10x20cm loaf tin
  7. Bung into oven and bake for 40-45mins

Vanilla Icing:

  1. Beat all ingredients until smooth
  2. Spread over cooled cake
