- 1 3/4 cup self raising flour
- 2 tblspn caster sugar
- 1 tspn baking powder
- 1 cup blueberries
- 1 egg, slighly beaten
- 3/4 cup milk
- 1/3 cup butter, melted
Instructions
- Preheat oven to 200C
- Brush oil into bottom only of 12 6cm muffin moulds
- Sift flour, sugar and baking powder into bowl
- Stir in blueberries
- In a small bowl, combine egg, milk and melted butter. Mix well
- Add liquids all at once to flour mixture
- Stir with a fork until all dry ingredients are just moistened. Batter should look quite lumpy
- Spoon batter into muffin cups, filling each cup 2/3 full only
- Bung in oven. Back 20-25 mins
- Serve warm with butter
